INGREDIENTS
- 2 thick slices of BÄKKER High-Protein Bread (slightly stale)
- 2 large, juicy field tomatoes
- 1 Çengelköy cucumber
- Half a red onion (finely chopped)
- 1 handful of fresh basil leaves
- 1 ball of fresh mozzarella cheese (optional)
- For the dressing: Olive oil, vinegar, garlic, salt, and black pepper.
PREPARATION STEPS
- Prepare the Bread: Cut the BÄKKER bread slices into large cubes. Sauté in a pan with a little olive oil for 3–4 minutes until lightly crispy, then set aside.
- Prepare the Vegetables: Dice the tomatoes into large cubes, slice the cucumbers into rounds, and thinly slice the red onions. Place all the vegetables in a large mixing bowl.
- Prepare the Dressing: In a separate small bowl, whisk together extra virgin olive oil, vinegar, minced garlic, sea salt, and black pepper with a fork until you have a smooth, well-blended dressing.
- Combining and Letting Rest: Add the crispy bread cubes to the bowl with the vegetables and pour the dressing over them. Toss well to ensure all ingredients are coated with the dressing. Let sit for about 10–15 minutes to allow the bread to absorb the tomato juices and dressing.
- Serving: In the final step, tear fresh basil leaves by hand and add them. If using, crumble mozzarella cheese and sprinkle it on top. Serve as a refreshing meal on hot summer days.
